Episode 17: Three kinds of wraps!

In this first episode after the summer holidays, Rianne shares three recipes for delicious wraps. Make sure you try this out!

Wrap 1: beans and tomatoes – 4 people

Fast version:
- 8-12 wraps
- 200 gr crème fraiche
- 1 packet of grated cheese
- 500gr minced meat (or meat replacement, but I wouldn’t replace it with extra beans)
- Hak ready-to-go bean dish “bonenschotel Mexicaans” (big pot – 600gr I believe)

Fry the meat until done. Add the bean stew. Assemble.

From scratch version:
- 8-12 wraps
- 200 gr crème fraiche
- 1 packet of grated cheese
- 500 gr minced meat
- 1 big onion
- 2 bell peppers
- 1 can of corn
- 1 can of kidney beans
- 1 can of diced tomatoes
- Iceberg lettuce
- 1 TS chili / cayenne
- 1 TBS smoked paprika
- 1 TBS cumin
- 1 TS cinnamon
- Salt & pepper

Instructions

1. Dice the onion and bell pepper.
2. Fry the onion for 3-5 minutes.
3. Add the meat, season with salt and pepper and fry until browned at all sides.
4. Add the bell pepper, corn, beans and spices.
5. Fry until warm.
6. Add the tomatoes and fry until almost all liquid has dissolved.
7. Assemble.

Wrap 2: Crispy schnitzel with chili – 4 people

4 crispy schnitzels (I can recommend the vegan ones, they taste better + don’t fall apart when cutting)
- Optional: crème fraiche and cheese
- Iceburg lettuce
- Chilli sauce
- Cucumber
- Mango
- Avocado
- Tomatoes
- Anything you like basically

Instructions

- Fry the schnitzel, cut the veggies. Assemble.

 

Wrap 3: pulled chicken (or jackfruit) – 4 people

- 8-12 wraps
- 2 chicken breasts (big ones)
- 1 can of chipotle sauce – maybe more. Or bbq sauce.
- 1 can of corn
- 1 onion
- 3-4 cloves of garlic

Instructions

1. Boil the chicken in a pot of salted water for 15-20 minutes. Keep the lid on to avoid too much evaporation of the water.
2. In the meantime, cut the onions and garlic.
3. Get the chicken out of the pan and shred it (pull it apart) with two forks. It should pull apart easily. If not, it probably isn’t fully cooked.
4. Fry the onion, garlic and the chicken in a frying pan until the onions have softened. Add the corn and the chipotle sauce. Just enough to coat everything.
5. Fry until it is all combined. In case you added too much sauce, fry for a bit longer to evaporate some liquid.
6. Assemble.
