Episode 1: Cola Chicken

In this very first episode of our cooking vlog 'Rianne's Recepten', IDE student Rianne Hagen shares her recipe for 'Cola Chicken'.

Ingredients (suitable for 4 people)

  • 300-400 gr chicken (thigh is preferred)
  • 1 broccoli
  • 350-400 gr rice
  • 200 ml cola (old cola is fine!)
  • 3 tablespoons ketchup
  • 3 tablespoons soy sauce
  • Salt, pepper and some (olive) oil
  • 1 cucumber
  • 100 gr sugar
  • 100 ml white vinegar

Instructions

Preheat the oven to 220 degrees Celsius. Cut the garlic in small pieces. Don’t cut the chicken!

Heat a frying pan on medium-high heat and fry the chicken in some oil. When it is seared (and browned) on all sides, take it out of the pan.

Without cleaning the pan, add some oil, turn the heat down to medium-low and fry the garlic in it for 1 minute. Then, add the cola, ketchup and soy sauce and stir to combine.

Place the chicken back in the pan and continue to cook on a low heat. It will take approximately 30-45 minutes for the chicken to cook and for the sauce to reduce to a thicker consistency. Turn the chicken frequently and you can use a spoon to scoop some sauce over the upper side while it is cooking.

In the meanwhile, cut the broccoli in slices. Place them on an oven rack covered in backing paper, drizzle some oil over the tops and finish with some salt and pepper. Put this in the oven for 20-30 minutes. No worries if the tops of the broccoli blacken slightly.

Cook the rice.

Cut ribbons of the cucumber with a cheese slicer. Heat the vinegar and sugar in a small pan until the sugar is dissolved. Turn off the heat and add the cucumber. Leave it until dinner is ready.
